Некаде во август се подновив со нов калап за големи мафини, а купив и калап за мали, кои го испробавме со неколку различни вкусови, благи и солени. Малите залачиња, како што рече Би, лажат да си касниш, па 24 мали мафини брзо ги снемува од послужавникот.
Пред Новата Година македонската твитер заедница правеше твитер елка од пластични шишиња. Со оглед на тоа што неделата знаев дека нема да присуствувам на „редењето“ на елката, се обидов да ги мотивирам во собирањето и на пунктот на Универзална претходниот ден им однесов домашно приготвени чоколадни мафини. Можеби не беа хит од самиот почеток, но мислам дека ги снема сите 24 парчиња. Некако добро одговараа со чајот од рум.

Нејсе, нема да ги раскажувам по трет пат чоколадните овдека. Последниот пост ми беше во мај и претпоставувам ќе помислите дека од тогаш не сум правела. Едноставно не сум експериментирала многу, па не сакав да се повторувам често со рецептите. Најчесто собирам рецепти по интернет (некои од нив ги чувам на pinterest), и проверувам што имам во фрижидерот подзаборавно. Обично така настануваат и нашите омилени рецепти. Понекогаш треба и повод за експериментирање. Како на пример празник. Така и овој пост.
Со оглед на тоа што Бадник го поминавме со родителите на Џиле, Стара Нова остана за нас. Традиционално по битолски, пита со паричка која се врти за Василица, подварок, зашто мажот мине знаел до сега колку може да е вкусен, и за десерт, нормално мафини. Овој пат од питата ми остана урда (млечна и неутрална од КАМ), а од полиците го „ископав“ мармаладот од свекрва ми (која многу вредно секоја година прави тони мармалади и сокови од овошје). Избирав помеѓу готовото слаткото од капини и мармаладот, но секако дека победи домашната комбинација од модри сливи и кајсии.
Радост е да ги мешаш состојките и да знаеш дека исходот ќе биде нешто фантастично. Основната смеса за тестото со урда беше доста сува, сосема малку зејтин и млеко, без јајца, па место маталка, ја мешав со пластичната лажица.
Морам да признаам дека се изненадив од тоа колку лесно се се измеша и соедини. Исто, лажицата ми помогна во поделба на тестото на 24 парчиња. 12 за подлога, 12 како капачиња. Една работа што сакам во домашните мафини е тоа што изгледаат накако несмасно. Тоа ми ги прави уште повкусни. Па сепак се трудев да ставам рамноправни количини на тесто и мармалад.
Морам да си ја пофалам рерната со меморираните програми, иако нема што, се знае температурата и времето на печење, но симпатично е кога рерната сама ќе си покаже. Совршени испаднаа. Слатки залачиња, крцкави поради малку подгорениот мармалад, а внатре совршено меки. А вкусот кој остана, беше налик на печен чиз кејк. Апсолутно совршено. И секако дека ќе ги правам пак и пак и пак.
Испратив неколку како поздрав до Марица и Жарко - нормално дека се вредни за споделување. Плус нас ни траеја неколку денови без да изгубат од вкусот и мекоста. И секако ги ставам на листата на нарачки штом го подготвам „маркетингот“. Ве меѓувреме, мојот контакт го имате во профилот, доколку сте заинтересирани. Пишете и ќе се договориме. ;)
Although more than 15 days have past since the New Year, it's been really difficult for me to start with my NY resolution to start catering, or better yet catering with muffins. One of my new year's wishes for the last 2-3 years is to open my own muffin place. Probably it will be impossible this year as well. But, I surely can't give up on my dreams. In the meanwhile I'm thinking of placing an advertisement for ordering muffins, by the customers choice, although I think I've perfected couple of tastes - chocolate, banana... And despite the many cooking blogs, the facts that muffins are easy to make anyways, and many of my friends make them, scare me a little, I won't give up.
Somewhere in august last year I bought new muffin tins, for big and small cakes, which we have tested with few different tastes, sweet and savory. The little bites, as my friend Bi said, can easily fool you, and all of the 24 little muffins are quickly dissappearing from the tray.
Also, few days before the New Year, the Macedonian twitter community made a twitter christmas tree from disposed plastic bottles. Because I knew I couldn't attend the building of the tree, I tried motivating them and on one of the collection points I brought them freshly made homemade muffins. Maybe they weren't a massive hit, but I think all of the 24 muffins were quickly gone. Somehow they fitted perfectly with the tea and rum.
I surely won't talk about the chocolate muffins once again. The last blog post I posted in May and I suppose you would think that I haven't made muffins since. I just haven't experimented a lot, so I didn't want to repeat the recipes. I usually collect ideas from the internet (some of them I keep on my pinterest account), and I check on what I have forgotten I have in my fridge. That's the way my favorite recipes are made. And sometimes I just need a cause for experimenting. Like a holiday for example. And so this blog post.
Because we spent Christmas eve (Orthodox) with G-le's parents, we spent the Orthodox New Year by ourselves. Traditionally as in my hometown of Bitola, we had an evening of pie with a lucky coin in it to break and share, sour cabbage with chicken, which my husband found very tasty, and for desert - muffins, of course. I had ricotta cheese left from making the pie (milky and neutral tasting from a local market), and I "dug out" a homemade marmalade that my mother-in-law made (she eagerly makes tons of marmalade and fruit juices every year). I chose between some blackberry jam I had bought and the marmalade, but naturally, the choice fell on the homemade combination of plums and apricots.
It's such a joy to mix the ingredients and just know that it will turn fantastic. The mixture for the pastry with the ricotta cheese turned out a bit dry, with just a bit of olive oil and milk and no eggs, so I used a spatula for mixing it.
I have to admit that I was surprised of the easiness of mixing and uniting the ingredients. Also, the spatula helped me to easily divide the pastry into 24 pieces, 12 as bases, 12 as covers. One thing I love about the homemade muffins are that they look a bit sloppy. It just makes them even tastier. But still I tried to make them as even as I could in the quantities of pastry and marmalade.
And I just have to boast with my oven and its preset programs; although,the baking time and temperature are not something to forget, it's kind of cute when the oven knows what to do by itself :)
They turned out just perfect. Sweet little bites, a bit crunchy because of the baked marmalade, and inside perfectly soft. And the aftertaste as that of a cheesecake. Absolutely perfect. Of course that I'll make them again and again and again.
I sent few to Maritza and Zharko - because they just should've been shared with people you love. We saved them for few days, and they never lost of the tenderness and taste. I just have to put them on my list of muffins to order as soon as I'm ready for marketing.
